River bars were one of Anka's favorite treats to make. She probably enjoyed making them more than eating them though, as she always shared them with her friends and family. Anka loved making others smile, and baking treats was an especially rewarding way to do that!
INGREDIENTS
½ cup butter
½ cup brown sugar
¼ cup sugar
1 egg
½ tsp vanilla
1 ¼ cups flour
½ tsp baking soda
½ tsp salt
¾ cup chocolate chips
DIRECTIONS
Preheat oven to 350º F.
Grease a 9” x 13” x 2” baking pan.
Mix together the butter, brown sugar, sugar, egg and vanilla. Beat until fluffy.
In a separate bowl mix the flour, baking soda and salt.
Using an electric mixer on low speed, gradually add the flour mixture to the butter mixture. (Note: the batter will be thick.)
Spread the batter into the pan. Sprinkle the chocolate chips on top.
Place the pan in the oven for 2 minutes until the chocolate chips soften. Then using a knife, “swirl” the melted chocolate chips to form “rivers”.
Continue baking for 12-15 minutes.
Let cool in the pan before cutting and serving.
