This recipe was Mom’s favorite source of protein when she was sick - it is easy to prepare, chew and swallow. It was a regular in her food rotation those first hectic months while our family regained its wits and learned to prepare food of greater variety and taste. There is great beauty in simplicity, though, and whenever times got tough Mom knew she could always rely on this most basic but nutritious dish to keep going.
INGREDIENTS
2 eggs (or 4 egg whites)
Pinch of salt
¼ tsp coarse black pepper
¼ tsp garlic powder
¼ tsp onion powder
⅛ tsp crushed red pepper flakes
¼ cup shredded mozzarella cheese
DIRECTIONS
In a bowl, beat the eggs and stir in the salt, black pepper, garlic powder, onion powder and red pepper flakes. Adjust the quantities to your taste preference.
Coat a small- or medium-sized frying pan with cooking spray and place on medium low heat. Pour the egg mixture into the pan and cook 4-6 minutes until partially set.
Sprinkle the cheese onto half of the omelet and continue cooking 1-2 minutes.
Using a spatula, fold the omelet half without cheese onto the half with cheese to form a semicircle. Continue cooking 1-2 minutes.
Flip the omelet and cook 1-2 minutes more before removing it from the pan.
