I will always be fond of Saturday afternoons when Daddy makes fried rice. Ma used to make the dish for his office potlucks, but now that she has passed he has taken it on and made it his own. That’s the great thing about Daddy - no matter how big the shoes are, he takes everything in stride.
INGREDIENTS
2-3 tbsp olive oil
1 large onion, finely chopped
16 oz mixed vegetables, frozen
1 cup basmati rice
2 tbsp raisins
1 tsp salt (more to taste)
1 tsp sugar
½ tsp cardamom powder
½ tsp nutmeg powder
½ tsp cinnamon powder
2 cups water
2 eggs, scrambled (optional)
DIRECTIONS
Preheat the oil in a large saucepan on medium heat. Add the onion and sauté until medium brown.
Add the mixed vegetables and sauté another 2-3 minutes. Stir in the rice with the vegetables.
Add the raisins, salt, sugar, cardamom, nutmeg and cinnamon. Mix everything together well.
Add the water and cover the saucepan with a lid. When steam starts to lift the lid off the pan, turn off the heat. Leave the covered saucepan on the stovetop for 30 minutes.
Before serving, stir in the scrambled eggs.
