Cooking for family was my mother’s way of expressing her love for everyone. She knew we all loved whatever she made whether it was ethnic food or good old American food, even if it wasn't the healthiest dish. After years of cooking I think she realized that some things would be better if she made it healthier. Hence, she tweaked the squash recipe into a sauce. She still did this with the same love she had always cooked with. During the last year of her illness she tried her best to cook her signature dishes. Her love was always that - food!

INGREDIENTS

1 medium onion, chopped

Olive oil as needed

2 cloves garlic, chopped

2 medium zucchini, cubed

15 oz canned tomatoes, chopped

Salt and pepper to taste

1 lb whole wheat spaghetti

DIRECTIONS

  1. Sauté the onion in olive oil for about 2-3 minutes. Add the garlic and sauté for another 2 minutes.

  2. Add the zucchini, tomatoes, salt and pepper. Cook until the zucchini is soft, then set aside to cool.

  3. Cook the spaghetti according to package instructions.

  4. Puree the zucchini mixture in a blender. Add the mixture to the cooked spaghetti. Toss to coat.
