Mammy’s definition of a "really good cook" was one who could prepare dishes that were tasty and healthy. She frequently hosted dinner parties and received praise for her authentic and unique Bengali dishes. On several occasions she asked me to observe her in the kitchen, but I regret never taking the opportunity to learn standing beside her. One of the few recipes I did learn was her turkey kabobs - they do not require any oil, and are delicious when baked in the oven. Now it is my signature item at cocktail parties. Perhaps she stands next to me as I prepare them.
INGREDIENTS
1 lb ground turkey (dark meat)
½ onion, finely chopped and fried
1 tbsp ginger paste
1 tbsp garlic paste
4 tsp Shan’s Bombay Biryani masala mix (or any other South Asian masala mix)
1 tsp turmeric powder
1 tsp salt
½ tsp sugar
Handful of cilantro, chopped
1 egg
DIRECTIONS
Preheat oven to 350º F.
Combine all the ingredients except for the egg.
Add the egg to the mixture.
Scoop spoonfuls of the mixture onto a baking tray.
Cover the tray with aluminum foil and bake for 30 minutes.
Uncover the tray and bake for another 10-15 minutes.
